Stuffed Halibut

Ingredients

4 6oz portions of Halibut
8oz crab
4oz sliced shiitake mushrooms
4oz sun-dried tomatoes
2oz fresh spinach
½ cup white wine
¼ cup lemon juice
¼ cup heavy cream
4 tablespoons chopped shallot
8oz Butter
Salt & Pepper
Crab Stuffing

Mix together crab, sliced shiitake mushrooms, sun-dried tomatoes and fresh spinach Season Halibut with salt and pepper and stuff with the crab stuffing. Preheat oven to 350 and bake for 15 minutes Sauce Confetti-Lemon Beurre Blanc In a saucepan add shallots, white wine and lemon juice. Bring to a boil, reduce heat to medium and continue simmering until sauce thickens. Pour in heavy cream and bring to simmer; simmer until cream has reduced by half. Add butter, increase heat to medium high and rapidly whisk in the butter until it has melted into the cream and thickened it. Add salt and pepper to taste. Serve immediately.
